Kids need an average of 3-5 servings of vegetables a day.
This includes 1 cup raw, leafy greens.
If using fresh herbs for the dressing, double the amount – ½ tsp. each.
Consider serving dressing on the side and letting diners add according to their tastes. Plenty of kids like plain, raw veggies best so don’t force them to eat dressing.

Kids Dish Summer Greek Salad ©

Serves 6
1 head butter lettuce or mixed greens of choice
1 cup grape tomatoes, sliced in half
1 small cucumber, diced
1/2 cup Kalamata olives
For Greek Dressing:
1 glove minced garlic
¼ cup lemon juice
½ cup olive oil
¼ tsp. salt
¼ tsp. pepper
¼ tsp. dried oregano
¼ tsp. dried mint
1. Wash and dry greens thoroughly and break into bite sized pieces.
2. Add grape tomatoes, cucumber and olives. Set aside.
3. To make dressing, whisk together ingredients until well incorporated.
4. Pour over greens and toss well.
